Job Description

Job Title: Commis Chef (Commis I / Commis II / Commis III) Department: Food & Beverage / Kitchen Reports To: Chef de Partie / Sous Chef / Executive Chef Job Summary: Commis Chefs support the kitchen brigade in preparing and cooking food in their assigned section. These roles are tiered based on experience, withCommis I being the most senior and Commis III being entry-level. They ensure food prep, cleanliness, and assistance with cooking under the guidance of senior chefs in departments like Indian, Continental, Chinese, Tandoor, Bakery, and Garde Manger. Key Responsibilities (All Levels, All Departments): Assist in food preparation as directed by Chef de Partie or Sous Chef. Wash, chop, grind, marinate, and portion ingredients for cooking. Support during service by preparing garnishes, accompaniments, and plating components. Maintain cleanliness and hygiene in work areas and equipment. Follow standard recipes, portion sizes, and presentation guidelines. Ensure proper storage and labeling of ingredients and leftovers. Keep mise-en-place ready for assigned station. Follow food safety, HACCP, and sanitation guidelines strictly. Learn and develop skills through active participation in kitchen operations. Dispose of waste properly and maintain workstation organization. Commis Levels:Commis 1 (Senior) 1.5-3 years of experience in a hotel or restaurant kitchen. Independently handles basic dishes and minor stations. Assists in overseeing Commis II & III under the CDP's guidance. Can step in during absence of CDP in basic operations. Commis 2 (Mid-level) 12 years of experience. Capable of preparing components under supervision. Demonstrates initiative in learning new techniques and dishes. Commis 3 (Entry-level) 01 year of experience; fresher or intern level. Focuses on learning, basic prep work, and support tasks. Follows directions strictly with minimal independent tasks. Required Skills & Qualifications: Diploma or certification in Culinary Arts or equivalent (preferred but not mandatory for Commis III). Passion for food and willingness to learn. Basic knowledge of food hygiene and safety standards. Good physical stamina and ability to work in a fast-paced environment. Ability to follow instructions and work as part of a team.
